Anna's Pavlova

There is a contest between New Zealand and Australia: Who created the Pav' in the late 20's  in honour of the great ballerina Anna Pavlova? Well, for our Anna, our Chef and australian born leader, there is no doubt! It's an Australian cake mate!

Well, cake may not be the right word... It is more like a sweet cloud, a gluten free soft meringue garnished with savory seasonal fruits and coulis.
